Broccoli – Cauliflower Low Carb Salad
2 C finely chopped broccoli
2 C finely chopped cauliflower
½ C real bacon bits
2 C grated cheddar (mild)
1 medium red onion (or, to taste)
1 carrot grated, if desired
2 - 2 ½ C mayonnaise
3 Tb sugar (optional)
4 Tb red wine vinegar (or, to taste); you can substitute real red wine if you like that flavor combination; or use balsamic vinegar if that is more to your taste.Combine vegetables, cheese, bacon and onion in large bowl. Add the dressing and scrape the bowl from the outside into the middle to evenly distribute everything. Chill for at least 4 hours, or overnight.
